warm and working hard
somehow, I got more motivated this afternoon. I just did a HUGE pile of purchase orders and cleared up some really old stuff on the computer. Yay! I successfully started teaching my mom how to do payroll... she has a few more lessons before she makes it through the whole system, but getting through the first step conflict free is a good thing.... giving her that job will free me up to do other things that are much needed.
Its super hot - I think that its way humid because its only 75 and I’m sweating up a storm. Okay, weatherbug says that its 75degrees with 64% humidity... that’s probably why I’m hot! It doesn’t help that this corner of the office gets NO air from the outside - I have two little fans pointing at me, but its not nearly enough. Its at least 5 degrees cooler outside! So I’m all sweaty!
I need to go grocery shopping on the way home - we have no milk, and need more fruit and stuff. So ashopping we will go! I hope we get some good stuff I want to make some rice some night this week... what do you typically eat with rice? I would be happy to eat it plain with butter and some corn or something on the side - maybe cornbread muffins? But E thinks that’s boring. Any ideas?

what about baked chicken? and then you could make chicken and rice soup in the crockpot with the leftovers and you’ve got a whole dinner waiting for you when you get home. yum!

You can always do a yummy stir-fry with lots of veggies, and then serve it over rice. (You could even add chicken or shrimp if you wanted.) Zal’s suggestion is a great one, too. Also, I know it sounds strange, but cooked apples and rice is really good too. I LOVE rice!

I just made dinner with rice last noight so I’ve got a great easy recipe for you! Cook a can of lowfat cream of chicken soup (preferably Campbell’s * mmm-mmm-good*) according to can’s directions. Add one can of precooked chicken, then the rice depending on how thick you want it. Put it all in a baking dish and sprinkle crushed potato chips on top for a great easy quick casserole!
